A wonderful accompaniment to all savoury dishes, this Indian-inspired recipe is great on burgers, or in pita bread with falafels. This artisan producer is the 2012 Winner of Best Food Producer from the Kitchen Bench, at the NZ Farmers Markets Awards. Gluten Free. Size - 270g.
Ingredients - Eggplant (41%), sugar, white vinegar, rice bran oil, onion, ginger, garlic, chilli, salt, spices.

Ways to use : Mix Eggplant Kasundi with equal parts of plain yoghurt & stir through blanched green beans; add tamari almonds or any other toasted nuts or seeds - serve cold as a salad.
Eggplant Kasundi with plain yoghurt or crème fraiche is great on hamburgers or pulled-port sliders.
Or stir through warm broccoli for a spicy side dish.
Mix Eggplant Kasundi with mayo & cold roast chicken or smoked chicken and pile onto salad greens for a quick tasty lunch.
Combine Eggplant Kasundi with creamy feta and pile onto crostini or blinis.
